Company restriction on menu, you can work out on specials and bend a bit the rules. staff is all trained on cp on line, so regarding hygene and safety it's ok. Lot of paperwork if you are a head or second acting as head. Recently Young's cut out most of the food supliers leaving one "bad" company for delivering goods at ridiculus prices. And if you are the one taking care of GP you realize is better leaving before is too late. Executive chefs (but just with the title, because as chef they are not worthing a bit) not organizing or supporting the heads chefs around. Hygiene, not the worst but head chef better wearing the gloves when making ready-to-eat foods by hands. Training, better give enough and clear indication instead of excluding somebody.
